Pumpkin Loaf (with Caramelized Walnut Topping)
One of the great things about fall is definitely pumpkin and spice (although, I did read an article about how the nostalgia of pumpkin spice makes it taste better than it actually is). At any rate, this pumpkin bread takes advantage of both the goodness of pumpkins and spice. Iconic. The caramelized walnut topping lends a fun crunch. This loaf is sure to be a hit!
little, ordinary life
"This job has been given to me to do.
Therefore, it is a gift.
Therefore, it is a privilege.
Therefore, it is an offering I may make to God.
Therefore, it is to be done gladly, if it is done for Him.
Here, not somewhere else, I may learn God's way.
In this job, not in some other, God looks for faithfulness."
- Elisabeth Elliot
It is well with my soul
I stumbled across Ann Voskamp's multivitamins a couple of weeks ago, which inspired me to share my own version. If you've never heard of it before, I highly recommend it. Essentially, Voskamp shares a collection of articles, photos, posts, and recipes designed to remind readers of the good gifts God has given and shift one's perspective from the earthly to the heavenly. God has provided tangible experiences of His love and faithfulness, and I wanted to share some of the things that are ministering to my soul.

Roasted Butternut Squash Soup
The ultimate autumn soup is butternut squash soup, in my opinion. We already associate squash and pumpkin with fall, and soups are a welcome warming presence in these cooler months, so what better than a marriage of these two delights? Here is my all-time favourite butternut squash soup recipe. It is a real crowd-pleaser, thick and creamy. Please dive in to the recipe below!
Thai Coconut Curry Soup
Here is a recipe for a luscious and exotic Thai coconut soup.
The original recipe we used was based on this one from All Recipes. I've tweaked it a bit here, but it still contains the basic delicious elements of the original recipe.

Fresh Ginger Juice
I was reading up on the health benefits of ginger, and it is useful for warding off germs, calming nausea, and even soothing sore muscles. In fact, some studies have found that ginger has some antibacterial, antiviral, and anti-inflammatory properties!
Raspberry Chocolate Truffles
If I had to describe these truffles in one word, it would be decadent. With a creamy milk chocolate shell, and a soft, creamy raspberry ganache center, these truffles are sure to be a hit! You could package them in cute little jars or boxes to give away as gifts, or just devour them with the special humans in your life.
An Easy Greek Meal: Souvlaki Pitas & Tzatziki Recipe
Souvlaki pitas are one of my favourite meals - not only are they easy to make, but they taste absolutely magnificent. I first discovered souvlaki at a local Greek restaurant, and from that very day, I was hooked. I was on a lunch date with my mum at the time, and as soon as we'd finished our meals, I asked mum if we could go grocery shopping to get the fixings so I could make souvlaki that evening for dinner! Caveat emptor: these pitas are quite messy, so do not eat this meal in front of someone you are trying to impress - unless you're trying to impress them with your spilling skills.
Easy No-Bake Jar Cheesecakes
I discovered mason jar cheesecakes on Pinterest one day, and I was immediately intrigued. A cheesecake recipe is always a go for me, but a cheesecake recipe you can literally put in your backpack to take on a hike? Even better! My special pal and I made these cheesecakes for a picnic that we went on a few weeks ago, and boy, was that one of the greatest decisions we made that day!
4 Ideas (and a Challenge) to Revitalize Your Prayer Time
"Be anxious for nothing, but in everything by prayer and supplication, with thanksgiving, let your requests be made known to God; and the peace of God, which surpasses all understanding, will guard your hearts and minds through Christ Jesus." -Philippians 4:6-7
