Feta + Herb Gemelli Pasta

If you need a quick but tasty meal, try this quick and easy Feta + Herb Gemelli pasta. It is low maintenance, low experience necessary, and DELISH!

I was originally inspired by a recipe I saw on Pinterest that called for Pappardelle pasta, but I switched it up with the Gemelli pasta because I love the little twists. You can use any pasta you have on hand, though!

One of the things I love the most about this pasta is that it still tastes fresh and healthy even though it’s basically straight carbs. This is definitely one of my new comfort foods!


Feta + Herb Gemelli Pasta

Serves 4 | Preparation Time: 15 minutes | Cooking Time: 30 minutes

Ingredients:

  • 1 punnet (681 g) assorted cherry tomatoes

  • 5 cloves fresh garlic, peeled

  • 1 1/2 cups feta cheese

  • zest of 1 lemon

  • salt + pepper to taste

  • 6 leaves of fresh basil, thinly sliced

  • 2-3 Tbsp olive oil

  • 1 box Gemelli pasta (450 g) - you can use any pasta you’d like, but Gemelli pasta is super fun!

Directions:

1. Preheat oven to 400° F.

2. Place feta, cherry tomatoes, and garlic in a baking dish. Drizzle with olive oil and sprinkle pepper, salt, and lemon zest over top. You can also add a few leaves of fresh basil if you’d like, but it gets very crispy!

1 punnet (681 g) cherry tomatoes, 1 1/2 cups feta, 5 cloves garlic, zest of 1 lemon, salt + pepper to taste.

3. Bake the tomato dish in the oven at 400° F for approximately 20-30 minutes, until the tomatoes start to split and slightly curl at the edges and the feta is a golden brown color.

4. In the meantime, bring a pot of water to a boil. Add a teaspoon of olive oil to the water to prevent the pasta from sticking. Add your pasta to the pot and boil until al dente, approximately 10 minutes. Drain the water and return the pasta to the pot.

1 tsp olive oil, 1 box Gemelli pasta.

5. Once the tomatoes are split and the feta is golden, remove from the oven and stir until well combined. The tomatoes should come apart very easily and form a sauce. If you want it to be very smooth, you can blend this mixture in a blender.

6. Thinly slice the basil and add to your pasta. Stir in the tomato-feta sauce, and season with salt, pepper, and any additional spices you want.

Fresh basil leaves, thinly sliced.

7. Serve and enjoy! So quick and easy :)
