Carrot Cake Cupcakes with Cream Cheese Frosting

Carrot cake is one of the only types of cake that I actually enjoy - it's so moist, cream cheese frosting is the best, and it even has vegetables and fruit in it so it's basically healthy!

Carrot cake seems like such a festive, springtime way to celebrate Easter, so what better time to post these delightful, decadent cupcakes than right now? Pineapple and carrot together contribute to the heavenly moistness of these cupcakes... Let's dive in to the recipe!


Carrot Cake Cupcakes & Cream Cheese Frosting

Serves: 18 | Preparation Time: 20 minutes | Baking Time: 18-20 minutes

Cupcake Ingredients:

- 3 cups flour

- 4 tsp baking powder

- 1 tsp salt

- 2 tsp cinnamon

- 2 tsp ginger

- 1 ½ tsp nutmeg

- ½ tsp allspice

- ½ tsp cloves

- 2 tsp baking soda

- 4 cups sugar

- 4 eggs

- 1 1/3 cup oil

- 2 cup crushed pineapple, drained

- 3 cups shredded carrots

- 1 ½ tsp vanilla

Cream Cheese Frosting Ingredients:

- 8 oz. cream cheese

- ½ cup butter

- 1 Tbsp vanilla

- 4 cups powdered sugar

- 1 Tbsp milk

Directions:

1. Preheat oven to 375°F and line muffin tin with muffin papers.

2. Mix together the dry ingredients (except the sugar) in a medium-sized bowl (flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves). In a separate bowl, stir together the white sugar, vegetable oil, and eggs until well combined.

3. Stir the wet and dry ingredients together, adding the carrot, pineapple, and vanilla.

4. Pour the batter generously into the prepared muffin tin (make sure they're pretty full).

5. Bake the cupcakes for approximately 20 minutes, or until a toothpick inserted in the center of the cupcake comes out clean. Let them cool fully prior to icing, or the icing will melt into rivulets of sadness and tears.

6. Cream the butter and cream cheese with an electric mixer until smooth and supple. Then beat in the icing sugar, vanilla, and milk. Continue to whip until the frosting is a smooth, delightful consistency.

7. Pipe icing liberally onto the cupcakes to maximize happiness and enjoyment. For an added effect, you could mix together pumpkin pie spice and sugar and garnish the top of your cupcakes while the icing is still soft.
