Quick & Easy Breakfast Sammies

When Lars and I celebrated our anniversary, we went out for brunch at a cute café in Jasper. We shared a Meltdown Sandwich and were immediately hooked! It was so tasty and seemed simple enough to duplicate, so the week after our return, I purchased the supplies and set about our breakfast meal prep.

We have quickly added this to our Sunday Reset rotation. Not only are they easy to prepare, but they are also stunningly delicious! You can prep these sammies in advance and reheat them in the microwave for on-the-go breakfasts.


Croissant Meltdown Sammies

Makes 10 sammies | Preparation Time: 25 minutes | Cooking Time: 15-20 minutes

Ingredients:

  • 10 croissants (either sandwich size or regular)

  • 1 package sandwich meat (we usually use ham)

  • 10 slices cheese (cheddar or swiss are our faves)

  • 4 eggs

  • 1 Tbsp butter or oil

  • 1 small onion, diced finely

  • 1/2 cup bell pepper, finely chopped

  • 2 tsp milk

  • 1 clove crushed garlic

  • 1 tsp black pepper

  • 1 tsp salt

  • 1 tsp smoked paprika

  • cayenne to taste (or sriracha seasoning from Costco)

Directions:

  1. Melt butter in a small frying pan on low heat. Add onion, bell pepper, and garlic and fry until softened.

    1 Tbsp butter or oil, 1 small diced onion, 1/2 cup chopped bell pepper, 1 clove crushed garlic.

  2. Whisk together eggs, milk, and spices. Pour mixture into the frying pan and cover with a lid until eggs are fully cooked into an omelette.

    4 eggs, 2 tsp milk, 1 tsp black pepper, 1 tsp salt, 1 tsp smoked paprika, cayenne or sriracha seasoning to taste.

  3. In the meantime, slice your croissants to create sandwich real estate. Place a folded piece of ham on each croissant.

  4. Once the omelette is finished, slice it into 10 pieces (like a pizza). Place one slice on each croissant and top with a slice of cheese. Cover with the top half of the croissant and place in a glass baking pan.

  5. Bake croissants at 350°F for 15-20 minutes, until cheese has melted and croissants are a little more golden brown.

  6. Enjoy! You can refrigerate for up to five days and reheat to enjoy. If you want a little more crunch to your sandwich, add arugula or lettuce after you reheat it!
